I was hungry and had a craving for cheese. was my body telling me I was in need of relaxation and/or vitamin A or D? Who knows!
So I made these, delicious savoury cheese souffles!

Ingredients:
50g unsalted butter
40g plain flour
300ml Almond Milk
½ tsp English mustard powder
80g strong Cheddar grated
4 large free-range eggs
Preparation & details:
Preheat the oven to 200°C/180°C fan assisted.
Brush 6 x 250ml ramekins with melted butter.
Whisk the egg whites until stiff.
Melt the butter in a pan, add the flour and mustard and cayenne pepper. Cook for a couple of minutes, then slowly add the milk. Stir until the mixture comes to the boil. Boil for 2 minutes and then take the pan off the heat. Stir in the cheese and egg yolks and season with salt and pepper.
Mix a spoonful of egg whites into the cheese, loosening the mix and then gently fold in the rest.
Spoon mix into the ramekins or dish.
Bake for 10-15 minutes, until risen and golden.
